The five-star Hotel welcomes a new Director of Food and Beverage and Assistant Director of Food and Beverage to continue delivering world-class culinary experiences

Four Seasons Hotel Nashville, the luxury five-star property in the heart of downtown Nashville’s SoBro neighbourhood, announces the addition of key personnel to lead the Hotel’s dynamic food and beverage initiatives, including overseeing signature dining concepts Mimo Restaurant and Bar and Rivière Rooftop.

Since opening in November 2022, Four Seasons Hotel Nashville has become a go-to destination for dining, special events, and hospitality for visitors and locals alike. Mimo Restaurant and Bar and Rivière Rooftop have quickly become downtown favourites for breakfast, lunch, dinner, and cocktails. The addition of Todorovic and Pinsard, and their combined experience, to the food and beverage team at the Hotel will continue to elevate these concepts and their reputations across Nashville and beyond.

Dejan Todorovic

As Director of Food and Beverage, Todorovic will oversee all food and beverage operations of the Hotel, including flagship restaurant Mimo Restaurant and Bar, and rooftop dining outlet Rivière, as well as special events and banquets. Growing up in Serbia, Todorovic started his hospitality career at 18 on the coast of Montenegro. He spent 12 years working for Celebrity Cruises in a variety of food and beverage roles, including sommelier, assistant maître d’, and general manager.

He joined the Four Seasons brand in 2014 at Four Seasons Resort Hualalai on Hawaii’s Big Island, where he spent three years as Assistant Food and Beverage Manager, Food and Beverage Manager, and Restaurant General Manager. After three years, he moved to Las Vegas and spent five years at Four Seasons Hotel Las Vegas, most recently serving as Assistant Food and Beverage Director.

Mathieu Pinsard

As Assistant Food and Beverage Director, Pinsard will work closely with all food and beverage operations and team to guarantee that guests receive the highest level of food quality and service. Additionally, Pinsard will assist in supervising the team’s growth and development. Pinsard began his hospitality career in London working for various restaurants and hotels including the Dorchester and 45 Park Lane. Rising through the ranks of food and beverage positions around the globe, Mathieu was the in-room dining manager at the Mandarin Oriental in Washington, DC before joining the pre-opening team of the Mandarin Oriental in Doha, Qatar in 2018 as beverage manager. After a successful opening, he was promoted to assistant director of food and beverage at the five-star property. In 2022, Mathieu joined the team at Boca Raton Resort as director of food and beverage to open new concept restaurants and reopen the large resort and club after a USD 200 million renovation and rebranding.

Restaurants and Bars at Four Seasons Hotel Nashville

Mimo Restaurant and Bar, the Hotel’s flagship restaurant where Southern Italian comfort food meets Southern hospitality, opened to critical success and local enthusiasm in November 2022. Rivière Rooftop, the Hotel’s French Riviera-inspired bar and restaurant on the seventh-floor pool deck, opened in May 2023, offering guests an al fresco dining experience with French fare and spectacular views of the Cumberland River. Both dining outlets recently unveiled new expanded menus to continue to meet the needs and desires of hotel guests, downtown professionals, and local diners.
