Carpaccio di Tonno // tuna, fermented spring onion, spring radish, crispy polenta – Yolan Spring 2021

Spring Menu. As the season ushers in brighter weather and increased bounty from artisan producers, Chef Mantuano and his culinary team are pleased to introduce decadent new flavors to Yolan’s a la carte and tasting menus. Italy’s regions of Friuli and Veneto lend inspiration. Located in Italy’s Northeastern coast, these regions are celebrated for their mastery of authentic rice and seafood dishes. In addition, guests will delight in seasonal produce preparations, with fava beans, asparagus, morel mushrooms, and artichokes adding layers of depth to every bite. Capturing the spirit of the season are dishes like Primavera, a vibrant asparagus gazpacho with mushrooms, spring vegetables, and Alta Badia Cheese; Risi e Bisi, an ample risotto with Parmigiano-Reggiano, fava beans, spring peas, and morel mushrooms; and Pesce, halibut brightly prepared with squid ink, white asparagus, and basil. Irresistible desserts crafted by Pastry Chef Noelle Marchetti sweetly conclude the meal, with selections such as Rabarbaro with ricotta, rhubarb, pickled Meyer lemon and spearmint, and the Caprifoglio with honeysuckle, pistachio, spring melon, fregolotta, and sea salt. New selections are available on both Yolan’s a la carte and tasting menus. View the spring menus here.
