Irish coffee or caife Gaelach if you will is an absolute classic and probably the most famous drink from Ireland. Though variations of the coffee-cocktail recipe pre-date this classic by at least 100 years, there are two claims to developing the modern recipe in the mid-20th century. One claim is that in 1942 or 1943, Joe Sheridan who was the head chef at the restaurant and coffee shop at the Foynes Airbase flying boat terminal, added whiskey to some of the passengers’ coffee as they disembarked. The San Francisco Chronicle’s travel writer, Stanton Delaplane is credited with introducing Irish coffee to the United States after drinking it as Shannon Airport.
