This cocktail was created by JoaquÃn Simó of Pouring Ribbons in New York. It combines Knappogue Castle 12 Year Old Irish Whiskey, a classic single malt expression, with lighter ingredients such as Lillet Rosé, Aperol, and cucumber. Finished with a drop of rose water and a pinch of salt, the end result is an Irish whiskey cocktail that’s both festive and fresh, perfect for St. Patrick’s Day and early springtime. The name honors the original architect of Knappogue Castle.
