Ingredients

  • 1 lb. bacon
  • 12 cups light brown sugar

Instructions

  1. Separate strips of bacon and blot dry with paper towels. Put sugar into a wide dish. Coat both sides of bacon in sugar, firmly pressing sugar into each strip. Lay bacon out on sheet pans as coated (some sugar will fall off).
  2. Cook bacon in a preheated 425° oven, turning once, until browned and lacquered, about 15 minutes. Transfer to a lightly oiled sheet pan to let cool. Break slices into thirds.

Ingredients

  • 1/2 cup packed light brown sugar
  • 1 tsp. ground black pepper
  • 1/2 to 1 tsp. red pepper flakes (the more, the spicier)
  • 8 slices thick cut bacon

Instructions

  1. With a rack in the top third of the oven, preheat to 400 degrees. Line a baking sheet with aluminum foil, place a wire rack on top of foil, and set aside.
  2. In a small bowl, stir together sugar, pepper, and red pepper flakes. On wire rack, lay bacon slices and evenly sprinkle brown sugar mixture over them. Bake, rotating the pan halfway to ensure even cooking, until bacon is crispy and glazed, 25 to 30 minutes.
  3. Remove baking sheet from oven and let cool 5 minutes. Serve warm with eggs or pancakes. Serves 4.

  • 20 pieces thick cut bacon
  • 1/2 cup dark brown sugar
  • 1 TBSN fresh cracked black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground ginger
  • 1 teaspoon smoked paprika
  • 1 teaspoon red pepper flakes
  • maple syrup

Instructions

  1. Place oven rack on center rack. Preheat oven to 350 degrees F.
  2. Combine brown sugar, black pepper, ginger, smoked paprika, red pepper flakes, and cayenne pepper in a bowl. Set aside.
  3. Place foil on a 13×9 baking sheet. Add bacon in a single layer. Use marinade brush to lightly coat bacon with maple syrup.
  4. Dredge marinated sides of bacon with brown sugar mixture and lay back into pan, seasoned side down.
  5. Lightly brush maple syrup on top side of bacon. Sprinkle generously with the brown sugar mixture.
  6. Bake in preheated oven on center rack for 20 minutes, then flip and cook for 15 minutes on other side.
  7. Remove bacon from oven and place on cooling rack to dry. Repeat with remaining bacon slices.
